Hungry for something fresh and different? Come dine with us at Restaurant Stranden and enjoy an ambitious menu in cozy surroundings. Expect beautiful dishes, great flavors, and a focus on sustainability. We serve a seasonal menu of 2-6 courses and a rustic dish of the day – all paired with carefully selected wines if you are in the mood.
Stranden is our apprentice restaurant, where everything is run by our talented apprentices training to become chefs and waiters. In many ways they are teaching us how the future of food will look like.
Please note that while children always are welcome at Nyborg Strand, there are no kids’ menus or highchairs at Stranden.
We want to show you that more sustainable dining does not have to be bland. We put as much careful thinking into lessening our environmental impact as we do to the flavors we want to share with you. This means that vegetables play an important role in our dishes – and that beef is fully banished. We do however serve fish, poultry, game, and pork alongside our vegetarian dishes.
Our ingredients are fresh, predominantly local, and always in season. The venison, we serve, has roamed the forests surrounding us, our vegetables are grown organically by our neighbors at Rosilde Højgaard, and our pork is sourced from Funen farmers who value animal welfare. Our wine list is 95 percent European, avoiding costly continental travels – luckily drinking European wines does not feel like a sacrifice.
We are also very focused on avoiding food waste, and we genuinely believe that Stranden is showing a way forward. We hope you have an appetite for something new.
Nyborg Strand is one of the largest providers of apprenticeships in Funen, and that is a responsibility we take very seriously. Stranden was founded after careful consideration, and it has been quite a success. Our apprentices are highly skilled and have had the proper training before being let lose in the kitchen or dining room.
The feedback from our guests is great, and HORESTA, the Danish trade association of hotels and restaurants, was so thrilled they even made a little video of Stranden, if you are curious to learn more. It is however in Danish.
We recommend that you book a table if you would like to dine at Stranden. It is a small and intimate restaurant, and it does happen that we are fully booked.
